Curtido
Curtido is an El Salvadorian cabbage relish that is similar to a slaw. It can be eaten on it's own or with pupusas. It's also really good on a hot dog.
1/2 head cabbage, sliced thin
1/2 small red onion, sliced thin
1 carrot, grated
1 serrano pepper, sliced
1 tsp. salt
1/2 tsp. dried oregano
1 c. white vinegar
Bring a large pot of water to a boil.
Place the cabbage and carrot in a metal strainer over the sink. Slowly pour the boiling water over the cabbage. allow to drain another minute or two.
Place the cabbage in a bowl with the onion and the salt and stir to combine. Allow to stand for 10 minutes.
Add serrano and oregano and mix to combine. Pack in to a quart sized jar, pressing if needs be to make it all fit. Pour vinegar over the top of the cabbage until it's covered. Allow to stand overnight.
