English Hot Pot
English hotpot is defined as "a casserole of meat and vegetables and sometimes topped with potatoes. Sausage is common". While sliced potatoes on top are typical I found several recipes that swapped the potatoes on top for mashed potatoes it got served over.
Chicken or beef bouillon work just fine in this recipe, I just happen to like the flavor of the Better than Bouillon brand vegetable bouillon and think it goes together well.
2 pkg. sausage
2 can white beans, drained
1 onion, sliced
1 tomato, chopped
olive oil
2 Tbsp. flour
1 bean can full of water
1 Tbsp. grainy mustard
1 Tbsp. veggie bouillon
1/4 tsp thyme
Mashed potatoes
Fresh chopped parsley
Heat your oven to 350.
In a medium sized skillet heat the olive oil. Brown the sausage on both sides and remove from the pan. Add the onions and cook over medium high heat until starting to color. Add the chopped tomatoes and cook until they start to break down. Stir in the flour and cook until it's combined with the vegetables fairly well.
Add all of the remaining ingredients and return the sausages to the pan. Bring to a boil, cover, and place in the oven.
Bake in the oven while making mashed potatoes, about 25 minutes.
Serve over mashed potatoes with fresh chopped parsley
