Hideg Oszibarackleves - Hungarian Peach Soup
It's peach season around here and I have a case sitting in my kitchen just there to enjoy. This delightful chilled peach soup is one of the ways we are enjoying them. Fruit soups are fairly uncommon in the United States, which is sad, because they are delicious. Hungary is know for it's cherry soup, but this summery peach version is my favorite.
8 large peaches
1 tsp. lemon juice
2 tsp. vanilla extract
1/4 c. plain or vanilla skyr, smetana, sour cream, whipped cream or yogurt
1/2 c. sweet liquid (sparkling apple cider, elderflower soda, sparkling white grape juice, apple juice, etc...)
2 - 8 Tbsp. sugar, to taste
Place everything in a blender and blend until smooth. Serve chilled.
