Stamppot


     This delicious dish is another great Dutch treat. It can be made from start to finish like this or is a great way to use up leftover mashed potatoes. 

2 1/2 lb. potatoes
1 stick butter
2 leeks, chopped
2 bunches kale, chopped fine
2 tsp. vinegar
Black pepper
1/2 - 1 c. milk
1 lb. rookwurst, sliced

Bring a large pot of salted water to a boil. Chop the potatoes in to cubes and boil until tender. 

Slice and fry the sausage. 

Meanwhile melt half the stick of butter in a pan. Add the leek and saute over medium heat until. Cook for 7 - 10 minutes or until the leek is tender. Add the kale and cook, stirring for a minute. Add the vinegar and 1/4 c. water. Cover and simmer until the kale is tender. 

Add the cooked and drained potatoes to the skillet with the kale. Mash the kale, remaining butter, and potatoes, adding milk as needed, until they are your desired texture. 

Top with the fried sausage and serve immediately.
