Romanian Apple Rice Pudding


   Welcome to From Our Dinner Tables post on the topic of Apples! This week we are sharing all things apple. I don't know about you, but I am pretending it is a fall with this dish and all the aromatic spices added to the bottom of this delicious Romanian recipe from The Bossy Kitchen. This rice pudding has tantalizing cooked apples on the bottom layer, reminiscent of apple pie, with a delicious and creamy baked rice pudding on the top for a comforting dish that can be a dessert or breakfast.

Romanian Rice Pudding Recipe
1 c. parboiled rice
2 c. milk
2 c. water
pinch salt
2 eggs
2 tsp vanilla extract
3/4 c. sugar
4 medium apples
4 Tbsp. butter
1 tsp. cinnamon
pinch each ginger, mace, allspice

Cook the butter, apples, cinnamon and spices on the stove over medium high heat until starting to soften. Cook and additional 5 minutes and remove from the heat. Add 2 tablespoons of the sugar and place in the bottom of a small casserole dish. Set aside

Pre-heat the oven to 350. 

Cook the rice, milk, water, and pinch of salt. Simmer over medium heat, stirring frequently, until the rice is tender and most of the liquid is absorbed, Remove from the heat and stir in the vanilla and half a cup of sugar. Allow to cool for about 5 minutes. 

Whisk the eggs and stir in to the cooked rice. Pour the rice on top of the apples. Sprinkle the remaining 2 tablespoons of sugar on top of the rice and place in the oven. Bake for 30 minute or until the rice is set. 

Serve hot directly out of the oven or later as a chilled dessert. Either way, serve with fruit preserves and enjoy.
