Italian Lupini Beans
These beans take a while to prepare but are fun to serve. This recipe is an Italian version traditional around Christmas. Though the preparation method is the same no matter what recipe you use this recipe makes use of the delightful flavor of olives and fresh herbs.
2 c. cooked lupini beans
1 c. green castelvetrano or ripe green olives
2 Tbsp. reserved olive liquid
2 Tbsp. olive oil
Fresh chopped parsely
Pinch black pepper
Toss the prepared lupini beans with the olives, oil, reserved olive liquid, parsley, and pepper. Cover and let stand for at least 2 hours.
Serve.
