Lotus Root Soup


     Hey again! This was another great discovery for me after I learned that I loved lotus root. This light and flavorful soup was so nice to enjoy 

Lotus Soup Recipe
6-7 boneless beef ribs
1 Tbsp. oil
4 oz. prepackaged lotus root
4 c. beef broth
1/2 c. water
2 tsp. soy sauce (more to taste) 
1 tsp. Szechuan peppercorns
1 nob ginger, quartered

Sliced green onions to serve

Heat the oil in a large pressure cooker. Add the beef and sear on all sides to brown. Work in batches if needed

Add the lotus root, beef brother, water, soy, peppercorns, and ginger. Place on high heat and cook for 60 minutes. 

Allow to natural release. Taste and adjust for salt, adding more soy sauce or salt as desired. Serve in bowls with beef, lotus slices, and brother. Top with fresh sliced green onions.
