British Onion and Cheese Sandwich


    Welcome! Greetings! This week at From our Dinner Table we are talking all about sandwiches. I'm sure so many of them will be amazing and delicious. Mine will be delicious, but it will also be very simple. And while it couldn't be, I did just do it myself, described as simple that flavor is anything but. The cheese adds an amazing richness, as cheese usually does. But the onion makes it interesting and delightful. If you don't like onions this sandwich isn't for you. But I happen to love them, and onions in mayo are high up on the list of things I enjoy. 

    So why this sandwich? Well, a few months ago my daughter and I started touring tea rooms and afternoon tea. Part of that meant talking to others who were into afternoon tea and sometimes British cooking in general. This recipe isn't typically used for afternoon tea, but I had to include it on my tea tower. While it isn't typical for afternoon tea, it is very, very, iconically British. On my tower above, it's the one on the bottom between the cucumber sandwiches and white egg salad and the whole wheat sandwich. The white bread with the wonderfully orange filling. 

     Traditionally you would use half cheddar cheese and half red Leicester cheese. Red Leicester isn't always available in my area so I used a mix of yellow and white cheddars. Use whatever you have on hand, it will be delicious with just about any cheese. The filling keeps pretty well once the sandwich is made and lasts a while.  It's also great if you want to get a head start; make the filling the day before and keep in an airtight container in the fridge. Then when you are ready to assemble you just spread it on and slice it up, making sure to cut off the crusts of course.  

     For the onion, I like a brown onion but anything will work. You can't go wrong with any type of onion you choose. Some people chop it fine, but I prefer the way the onion tastes when it has been grated. It breaks it down quite a bit and helps the onion flavor really be prominent in the filling.

Cheese and Onion Sandwich 
6-8 slices white bread
8 oz. shredded cheddar cheese
1/2 onion
1/4 - 1/2 c. mayo

Grate the onion on a large grater. Combine the mayo, grate onion pulp, and the liquid it made while grating. Add the shredded cheese and stir to combine. 

Separate the mixture into 3 or 4 portions and spread on top of a slice of bread. Spread the filling so it's flat and all the way to the edges. Top with another piece of white bread and press down gently to help it adhere. 

Using a serrated knife and cut the crusts off the sandwich with a sawing motion, you don't want to apply pressure and squish the bread. Once the crusts have been removed cut the sandwiches into triangles and enjoy.
