Picado de Rabano - Guatemalan Radish Salad


     Imagine this, it's not even quite summer yet and starting to get hot and you need something that is both delicious and refreshing and goes great with a lot of meals, but is also interesting to eat. that is where this salad comes in. You know I love anything with citrus and mint and it does not disappoint. The radishes are the perfect backdrop for the delightful and springy dressing. 

     I first saw this recipe on a friends blog, Penniless Parenting. I went to do a little more research and came across so many more recipes with some variations. One in particular I really liked, Recetas de Guatemala. Some version had tomatoes, some had oils added, some even added crunched up pork rinds. Some had red onion and some none at all. I have tried it with none, which was my favorite, but I also tried it with green onions which was good too and a great mild onion to go with the orange and mint. 

1 lb. radishes
1 orange
1/2 lemon
1 green onion, sliced (optional)
1 pkg. (0.5 oz.) Fresh Mint
pinch salt

Coarsely chop the radishes. 

Juice the orange and lemon. Chop the mint. Combine the orange juice, lemon juice, mint, and green onion. Combine with the chopped radishes. Place in an airtight container and chill for at least an hour. 

Remove from the fridge and sprinkle with a tiny pinch of salt and toss to combine. 

Serve.
